To set it for your email, switch to the "Message Settings" menu and insert the desired text in the "Hidden Preheader" field.
Please select "Fill in with white space" if you only need the email subject without a hidden preheader.

Why does Apple Mail still show email body text in the preview?
Please note that when sending emails to Apple Mail, some recipients might still see part of the email body text in the preview, even if "Fill in with white space" is enabled. This happens because Apple Mail allows users to resize the preview pane, increasing its width beyond default limits. Also, the preview length depends on the recipient’s screen size.
